"Pachamaca" at our house

We decided to cook "Pachamaca" at our house instead of purchasing it at a restaurant. We invited some families from our church to come teach us and enjoyed the fellowship together. 
The first step was shopping for the ingredients at the market. 





 The next step was for us to go find the proper rocks at the riverbeds.

 The preparation of the food is done the day before so it has time to marinate.



 The day of cooking came and the preparations of making the oven in the ground were needed.

 It took over 2 hours to get the rocks nice and hot over a fire.






 Once the rocks were hot enough, the food was brought out and wrapped in alfalfa with the rocks before covered with dirt and plastic.
 
 After cooking in the ground for a little over an hour, it was time to remove the dirt and plastic and reveal the cooked food. 



"Pachamaca" usually includes 3 different meats (Chicken, Pig, Beef, and sometime guinee pig), different potatoes, and humitas (similar to corn bread). 

 It's a very tasty meal that takes a long time to prepare but worth the memories spent together. The Peruvian tailgating party.
